Brownies recipe from Hiltl

For the chocolate lovers, we share once more this recipe from Hitl.

The recipe, from Hiltl in Zurich, comes out of their cookbook “Hiltl. Virtuoso Vegetarian” (German: Hiltl. Vegetarisch nach Lust und Laune / French: Hiltl. Saveurs et fantasies végétariennes). The book is available at the „Haus Hiltl“ or online here .

The best brownies in Zurich

Makes 25 brownies – (30 x 27 cm baking tin)

Ingredients:

360 g butter

500 g vanilla couverture, grated (dark couverture)

5 large eggs

A pinch of salt

540 g brown sugar

½ tsp vanilla sugar

300 g shelled walnuts

360 g brown flour

Butter for the tin

How to make it:

  • Melt the butter and vanilla couverture in a small pan on the lowest heat.
  • Beat the eggs, salt, brown sugar and vanilla sugar till they are light and fluffy.
  • Carefully fold the egg mixture into the butter and chocolate mixture. Fold in the flour and the walnuts.
  • Preheat the oven to 180 °C. Generously butter the baking tin.
  • Spoon the brownie mixture into the tin and spread smoothly.
  • Bake for about 35 minutes in the lower third of the oven (about 5 minutes less in a convection oven).
  • Leave to cool and then cut into 4 cm squares.

 

TIP: The brownies can be stored in a tin for several days.

The Haus Hiltl, owned by Rolf and Marielle Hiltl, is the oldest vegetarian restaurant in the world and one of the best restaurants in Zurich. It was founded in 1898 by Ambrosius Hiltl.

In 2000 Rolf Hiltl joined the brothers Frei (Reto, Christian & Daniel) in a new adventure. The four started tibits, a concept for classy vegetarian fast food with restaurants in Zurich, Bern, Basel, Winterthur and London.
