Mexican Fajitas à la Provençale (servings 4)

 What do you need:
3 large chicken breasts
5 large peppers of different colors
7oz (200 g) of cheddar cheese
1 can of medium salsa sauce
1 tablespoon of herbs of Provence (thyme, lavender, basil, fennel, savory)
Salt and pepper

At least 8 flour tortillas

Ingredients for your chicken fajitas

 

How to make it:

  1. Wash and remove the seeds of the peppers. Cut in thin slices.
  2. Sauté peppers on medium heat. Reduce, add 2 tablespoons of sauce and 1 tablespoon of herbs of Provence and cover for at least 20 minutes.
  3. In the meantime, cut your chicken and fry until cooked. Add salt and pepper. When almost done add 1 tablespoon of salsa sauce.
  4. Put everything together for another 5 minutes on low heat.
  5. Grate your cheese.
  6. Warm up your tortillas in the microwave (1 minute for 4) with plastic wrap covering. 
  7. Put as much of the peppers and chicken as you wish. Add some salsa sauce and some cheddar. Fold your tortilla.

You can also do the same with tender beef or shrimp. Excellent with Margaritas in the summer.
