Indian potato chicken curry (4 servings)

What you need:

spices: 1 tablespoon of curcuma, 1 tablespoon of ginger, ¼ tablespoon of cinnamon, ¼ tablespoon of cayenne pepper, 1 teaspoon of Indian curry spices, 3 tablespoons of coriander leaves

1 red onion

2 large garlic cloves

1 teaspoon of lemon juice

22.65 oz (650 ml) of coconut milk

4 large chicken breasts

about 6 large potatos

How to make it:

  1. Boil water to cook your potatos à l’anglaise.
  2. Fry the onion cut in small pieces in a frying pan with some oil.
  3. Add garlic and all spices listed. Make sure it does not burn.

5. Add chicken and coconut with the spices and leave everything cook slowly.

6. When the potatos are cooked, let them cool down. Don’t wait till they break. Peel them and cut in 4 pieces.

7. Add them to the rest and add the coriander leaves. Salt as desired and add the lemon.

This dish is very good with Nam bread and cooked spinach leaves.
