A little while ago when choosing my birthday cake, I came across this recipe. And I thought it was exactly what we needed: a mix of everything: a cookie, a touch of mascarpone and a few strawberries for the spring freshness. I found the result as good as beautiful. In the original recipe, there is Greek yogurt. I replaced it with light heavy cream, and I found that the result was more delicious. I found out later that this was a common way of doing things in Eastern Europe, where Greek yogurt has long been unknown. It’s funny how our genes speak for us! So here is Yogurt, mascarpone and strawberry cake for you.

DEGREE OF DIFFICULTY: EASY ⭐

PREPARATION TIME: 30 MIN, COOKING TIME: 35 MIN

For a serving of 6 people

Ingredients: (For a serving of 6 people)

  • 260g flour
  • 180g Greek yogurt (or light heavy cream)
  • 160g butter
  • 150g whole cane sugar
  • 100g liquid honey
  • 3 eggs
  • ½ sachet of baking powder

For the topping:

  • 250g mascarpone
  • 5-6 tbsp liquid cream
  • 200g strawberries

Preparation:

  1. Preheat the oven to 180 °
  2. Melt the butter, and use a little to butter the pan.
  3. In a bowl, combine the remaining melted butter, eggs, honey, and yogurt.
  4. Add the flour, baking powder and sugar: Mix quickly
  5. Pour the dough into the pan and cook for 30 to 35 minutes. Let it cool before unmolding.
  6. While the cake is baking, rinse and dry the strawberries, cut them in half. Whip the mascarpone with the liquid cream
  7. Delicately place the mascarpone cream on the cake, decorate with the strawberries.
