Calvados apple cake (8 servings)
What you will need:
6 Gala apples
5.2 oz (150 g) of butter
4.9 oz (140 g) flour
4 eggs
3 oz (90 ml) of crème fraiche
7.4 oz (210 g) of sugar and 2 tablespoons
a little salt
6 tablespoons of calvados
2.5 tablespoons of water
1 tablespoon of cinnamon
1.4 oz (40 g) of raisins
A springform mold (9.5 inches/24 cm)
How to make it:
- Preheat the oven to 356F (180C).
- Skin the apples and cut them in 4.
- Warm up 3.1 oz (90 g) of butter and add apples, 2 tablespoons of sugar and the cinnamon. Leave till lightly brown.
- Take your eggs and beat with 5.9 oz (170 g) of sugar.
- Add the salt and the crème fraiche plus 2.1 oz (60gr) of melted butter and liquid left over from the buttered apples.
- Add the raisins.
- Prepare your mold. Butter it or use back in paper.
- Lay our apples and pour batter over it.
- Cook for about 40 minutes.
- When done, wait a little and remove from mold.
- Take a small pan and mix water with 1.4 oz (40 g) of sugar. Boil it and then add calvados outside of fire. Spread on cake. Serve lukewarm.
