I would like to share with you the recipe of my quiche Lorraine, a dish made of eggs, bacon, ham and cheese. I use a flaky dough and serve it with a side salad. It is perfect warm or cold.
What you need:
1 flaky dough
2.7 oz (75 g) of bacon cubes
3.2 oz (90 g) of ham or about 3 large slices
2 eggs
1 1/2 pot of crème fraiche or about 9.5 oz (270 g)
1 packet of grated emmenthal cheese or about 4.2 oz (120 g)
salt, pepper and some ground nutmeg
How to make it:
1. Preheat oven to 410 Fahrenheits (210 celcius). Poke the dough with a fork a few times. Place aluminium foil on the dough and add enough rice grains to cover the dough. Precook dough about 8 minutes.
2. Take a bowl and put in the cream and the eggs. Beat well.
3. Add the diced bacon and ham. Then add 1/3 of the cheese.
4. Salt and pepper and add a pinch of ground nutmeg.
5. Spread evenly the preparation on the dough
6. Add the rest of the cheese for the topping.
7. Cook for 15 minutes at 410 Fahrenheits (210 celcius). Reduce the heat to 356 Fahrenheits (180 Celcius) and cook for 10 minutes. Let it cool down for 10-15 minutes before serving. It will be easier to cut.
