Tarte Flambée – Flammkuchen – Flammekueche (3 servings)
What you need:
4.7 fluid oz (140 ml) of milk
13.2 oz (375 g) of flour
3 tablespoons of oil
14 g of fresh yeast
3/4 teaspoon of salt
5 tablespoons of warm water
7 oz (200 g) of bacon
2.5 oz (70 g) of chopped onions
3.5 oz (100 g) of crème fraiche
salt and pepper

How to make it:
- Mix the yeast with the warm water until it is dissolved.
- Mix in bread machine milk, oil, flour, salt and the yeast. Yeast should not touch the salt.
- Choose the appropriate program on your machine. It goes for about 1h30 minutes.
- Divide the doug in three and roll them. Lay on baking paper and roll again after 15 minutes.
- Mix crème fraiche with salt and pepper and spread some everywhere on the doughs.
- Sprinkle part of the onions and bacon on each tarte flambée.
- Bake at 482 F (250 Celsius) in a preheated oven for about 10 minutes.
Cut the slices and enjoy with a cool glass of Alsatian wine, some Pinot Gris for instance. It is the custom to eat it with the fingers.
