Sweet Potato Brownie Recipe

Servings 10 | Prep. Time 50 minutes | Baking required

Ingredients

20g / raw cacao powder

1 Sweet Potato

70g / oats

60ml / date syrup

60ml / melted coconut oil

60g / Raw almonds

Raw Cocoa Nibs (optional)

Directions

  1. Peel the sweet potato, dice it and boil it or steam it until soft. Set aside to cool down.
  2. Pre heat the oven to 180 degrees Celsius.
  3. Grind the almonds into flour and set aside – Grind the oats into flour and set aside
  4. Place in a Food Processor the oat flour, almond flour, date syrup or sweetener of choice and cocoa powder.
  5. Mash the cooled down sweet potatoes with a fork and then place into the food processor.
  6. Mix it all and add the melted coconut oil.
  7. Line a baking tray with baking paper and pour the mix inside.
  8. Sprinkle some raw cocoa nibs on top if you wish
  9. Bake for 180 Celsius – 35 minutes
  10. Cool down for 15 minutes and enjoy! You can store it in an airtight container in the fridge for up to 5 days.
