Vivamost recently received the Indian spice starter kit from The Randin Chef. It arrived just after two days of ordering the kit. It was very well packed and accompanied with a recipe from the chef, Michel.
The Randin Chef is made of Michel and his wife Vanessa. Michel, a former banker, is Swiss and has been taking care of the Indian workshops in Romandie since 2019. His wife, Vanessa is Indian and takes care of the marketing.
Coriander seed
It is a mild spice also called cilantro if bought fresh.
Turmeric powder
The turmeric in the spice kit is the longa variety most commonly used in Indian cooking. It is used in curry powder and it is for 40/50% its main component. It is also used in soups and sauces.
Clove
It is very aromatic and brings an intense flavor to your dishes.
Green cardamom
It is an aromatic spice.
Garam masala
It is a hot spice to keep warm as its name reveals it. Garam means hot and masala bled. Garam masala is made of a blend of various spices and differs according to regions. Their garam masala is made of special spices mixed together in hope to make your dinners even faster to prepare, said Chef Michel Randin. It is excellent in Poulet Tikka, fish, rice, Dhal, vegetables, samosas and curries.
Kashmiri chili powder
It is a hot spice.
Curry leave
It is an aromatic spice and the essential for Indian curries-
Black mustard seed
It is a hot spice and of the oldest spice which can be recorded around 3000bc. It is excellent added to chutneys, dahls, pickles and curries.
Ghee
The Randin Chef ghee is made from butter produced by the dairy farmer in Pampigny (VD). Once opened the bottle of ghee should be kept in a cold, dark place (ideally the fridge) for a shelf life of three months. The key is to ensure that the bottle – opened or unopened – doesn’t come into direct contact with light.
Cumin seed
It is a strong aromatic spice with a sweet aroma and a bitter pungent taste.
The nine base spices included in the kit can be used to make a range of recipes. On The Randin Chef website there are a selection of recipes (in French and English) where you can see the different combinations of spices that can be used for vegetarian and non-vegetarian dishes.
