Grilled chicken with Herbs of Provence (3 servings)
What you need:
3 large chicken breasts
3 garlic cloves
1 tablespoon of Herbs of Provence
salt and pepper
1 1/2 tablespoon of mustard
1 1/2 tablespoon of oil
4 tablespoons of balsamic vinegar
Chicken breast with herbs of Provence marinade
How to make it:
1. Salt and pepper the chicken breasts.
2. Make the marinade (maximum 2 hours in advance). Crush the garlic cloves and put with all ingredients.
3. Brush the sauce on the breasts on both side. Keep the rest for the grilling.
4. Warm up the grill 10 minutes on medium setting. Place the chicken breast on the grill. Grill 7 minutes.
5. Put some sauce on the chicken and turn 5 more minutes.
6. Put more sauce if you still have some and cook another 2 minutes. Don’t over cook it.
Grilled chicken with a side of potatoes with thyme
It is excellent with roasted potatoes. I cut potatoes in 4 pieces, fry them and add salt and thyme. Then I turn down the heat to medium and add 2 garlic cloves. When it is almost done, I turned down the heat on low and cover it for another 10 minutes. In total it takes about 35-40 minutes.
It is perfect with a glass of Spanish red wine Rioja Crianza 2005 for example.
