Mini raisin Brioches (12 servings)

What you will need:

12.4 oz (350 g flour)

1 oz (30 g) of fresh yeast

2.3 oz (65 g) of sugar and 1 tablespoon

2.5 oz (70 g) of raisins

3.9 oz (110 g) of butter

3.7 fluid oz (110 ml) of milk

5 eggs

5 tablespoons of apple juice

1 1/2 pinch of salt

12 mini muffins

 

1 Muffin mold for 12 mini muffins

12 mini muffin papers

How to make it:

  1. Take the flour and put it in a large container. In the middle, add the yeast which you need to dissolve with 100 ml of milk and 1 tablespoon of sugar. Cover and wait about a quarter of an hour until has risen.
  2. Add the 2 eggs, 2 yellows, 2.3 oz (65 g) of sugar and the salt. Mix well.
  3. Add the butter for another 5 minutes. Wait about 40 minutes until it has risen.
  4. Prepare the raisins: cover them with the apple juice.
  5. When the dough is ready, knead well.
  6. Add the raisins to the dough.

  1. Wait for another 30 minutes.
  2. Form the brioches. Take 3/4 of the dough for the big part and 1/4 for the top. Make 12 bottoms and put them in the paper. Press in the middle of each.
  3. Take a bit of milk and mix well with one yellow. Spread over the dough with a cooking brush.
  4. Preheat the oven at 392 F (200 Celsius).
  5. Divide the left over from the dough and make 12 small tops.
  6. Put them on top of the bottoms.
  7. Let rise another 10 minutes.
  8. Cover with much and yellow.
  9. Put muffins in the oven and brings temperature to 357 F (180 Celsius) with some water poured at the bottom of the oven. Bake for about 15 minutes until golden brown.
