Sweet Potato Brownie Recipe

Ingredients
20g / raw cacao powder
1 Sweet Potato
70g / oats
60ml / date syrup
60ml / melted coconut oil
60g / Raw almonds
Raw Cocoa Nibs (optional)

Directions
- Peel the sweet potato, dice it and boil it or steam it until soft. Set aside to cool down.
- Pre heat the oven to 180 degrees Celsius.
- Grind the almonds into flour and set aside – Grind the oats into flour and set aside
- Place in a Food Processor the oat flour, almond flour, date syrup or sweetener of choice and cocoa powder.
- Mash the cooled down sweet potatoes with a fork and then place into the food processor.
- Mix it all and add the melted coconut oil.
- Line a baking tray with baking paper and pour the mix inside.
- Sprinkle some raw cocoa nibs on top if you wish
- Bake for 180 Celsius – 35 minutes
- Cool down for 15 minutes and enjoy! You can store it in an airtight container in the fridge for up to 5 days.
