Zucchini omelet with rosemary (4 servings)

What you need:

1 onion

2 large zucchinis

5 eggs

1 sprig of rosemary

salt and pepper

some oil for frying

How to make it:

  1. Saute the onion.
  2. Add the sliced zucchinis. Add salt, pepper and sprig of rosemary and brown lightly.

3. When ready make the omelet. Remove sprig of rosemary

4. Don’t over cook it. Fold the omelet and serve.

Perfect with ham and a side of mashed potatoes.
