What you need:
18 oz (510 g) of flour
3.9 fluid oz (320 ml) of lukewarm milk
1 egg
1 teaspoon of salt
0.8 oz (22 g) of fresh yeast
31/2 tablespoons of sugar
2.5 oz (80 g) of butter
2 tablespoons of almonds
2.5 oz (70 g) of raisins
How to make it:
1. Make the dough: Mix lukewarm milk with the sugar and then add the yeast. Turn with a fork until it is mixed. Add to the flour. Add soft butter and knead well. Let it rise in a warm place with a cloth on top. I make my dough in a bread machine.
2. When done add the raisins and form 9 balls. Make 8 of equal weight and make the middle one bigger. Place the 8 smaller balls around the middle ball. Put everything on a baking paper and let rise again for about 30 minutes. I put my cake in the oven with a pan of warm water. The oven was preheated, then cooled down.
3. When ready, remove from oven and preheat to 356 F (180 C). Take 1 egg and brush over the dough. Sprinkle granulated sugar on top of the 8 balls and almonds on the middle one.
4. Cook in the lower half of the oven for about 30 minutes or until golden brown.
Enjoy lukewarm. Don’ t forget to hide a porcelain bean if you want to!
