Let’s have a crêpe Party – galettes

Makes about 7 galettes:

10.5oz (300g) of buckwheat flour
1 tablespoon of salt
½ egg
20.2 fluid oz (600 ml) of water
½ tablespoon of fluid honey (optional)

Prepare this early in the morning for the evening with only 13.5 fluid oz (400ml). The dough is going to thicken. Add the rest of the water later – 6.7 fluid oz (200ml). If too thick, add more water. Galettes are thicker than crêpes.

Nordic galette

 

What you need:

5.2oz (150ml) of crème fraiche for 4 galettes
2 tablespoons of fresh chives
smoked salmon sliced

salt and pepper

Mix well the cream with chives, salt and pepper

How to make it:

  1. Warm up the frying pan or electric crêpe cooker. Spread some oil with a paper towel.
  2. When warm, add 2 tablespoons of batter with a ladle and use your wooden rake to spread it. Go quickly.
  3. Turn after a few minutes when the bottom no longer sticks to the pan.
  4. Add some salmon. On top put 1 or 2 tablespoons of cream.
  5. Fold the 4 sides of the galette or 2 sides only if you prefer. Remove quickly.

Ham, cheese and mushroom galette

 

What you need:
1 slice of ham for 1 galette
Grated Emmental cheese
3-4 sauteed mushrooms

How to make it:
Warm up the frying pan or electric crêpe cooker. Spread some oil with a paper towel.

  1. When warm, add 2 tablespoons of batter with a ladle and use your wooden rake to spread it. Go quickly.
  2. Turn after a few minutes when the bottom no longer sticks to the pan.
  3. Add ham, mushrooms and cheese.
  4. Wait until the cheese has melted and fold the 4 sides of the galette or 2 if you prefer.

If you want you can add an egg to it. You can fry the egg in another pan and put it on top of your folded galette.

Other ideas:

Goat cheese, bacon, sliced potatoes and cheese.
