Richard Kägi Lemon slices recipe

When you think of the holiday season, you think of baking cookies with your children and for your family and friends. 

Richard Kägi, Foodscout at Globus for more than 2 decades, shares a recipe of his delicious cookies.

Ingredients for 40 lemon slices

200 g butter, soft
120 g of powdered sugar, sieved
1 egg
1 organic lemon, grated peel
300 g of flour, sieved
100 g almonds, grated

Filling:
150 g red currant jelly

Glaze:
200 g powdered sugar, sieved
3-4 tablespoons of lemon juice

Level: light
Time: 60 minutes

Preparation:
Preheat oven to 190 ᵒC

Making short crust pastry:
Process butter and powdered sugar to a smooth consistency, add egg and lemon zest. Add the flour and almonds and fold into a dough. Rest for 1-2 hours in the refrigerator.

Baking:
Roll out shortcrust pastry to 4 mm. Prick the dough several times with a fork. Bake for 15-17 minutes.

Filling the dough:
Cut the baked shortcrust pastry in half and spread one half with the jam.

Glazing and finishing:
Stir powdered sugar and lemon juice until smooth. Brush the second shortcrust half with it. Place the glazed half on the half covered with currant jelly. The layered pastry still warm cut into bite-sized cuts.
