Richard Kägi shares his Walnut marzipan diamonds recipe.
Ingredients for 1 sheet
Dough:
450 g of flour, sieved
250 g butter, soft
125 g of walnuts, halved
1 egg
125 g of sugar
Filling:
250 g apricot jam
250 g marzipan raw material
Decoration:
200 g chocolate couverture
2 packets of walnut halves
Level: Easy
Time: 60 minutes
Preparation:
Preheat oven to 200 ᵒC
Make dough:
Mix all ingredients well and form into a dough. Cool for 30 minutes.
Making the squares:
Cut the dough in half. Roll out one half thinly and coat with half of the jam. Roll out the marzipan paste in the same size, place on the dough plate and spread with the remaining jam. Roll out the second half of the dough and place it on top. Cut the layered dough into squares of about 3 x 6.5 cm with a dough wheel.
Bake:
Bake until golden brown for 17-20 minutes, cool on a grid.
Complete:
Melt couverture in a water bath. Spread the squares with the liquid chocolate and cover each with one walnut half.
